Today we are in Chicago for Day 1 of the International Foodservice Sustainability Symposium. It is being hosted by Kendall College (noted for culinary and hospitality) in Chicago. The symposium kicks off with keynote speech by Fred Kirschenmann, Ph.D. (Is Our Agriculture System Sustainable?). Additional sessions late this afternoon and the symposium continues Wednesday at the Hotel Allegro, which is Green Seal Silver Certified.
